The FDA (Food and Drug Administration) has announced that a Salmonella outbreak associated with cucumbers is now officially over. This particular outbreak resulted in 155 hospitalizations across the country.
This is an important announcement since Salmonella is a common and serious foodborne illness. Symptoms can include diarrhea, fever, and stomach cramps which usually occur 12 to 72 hours after being exposed to the bacteria. Most people recover in a week or so, but it can be severe or even deadly for some, especially people with weaker immune systems.
To avoid future Salmonella infection, the FDA recommends the following:
1. Always wash your hands, utensils, and food surfaces before and after handling food.
2. Serve food promptly. Perishable food should not be left out for more than two hours.
3. Cook foods to a safe temperature.
4. Keep food properly refrigerated.
5. Avoid cross-contamination, especially with raw eggs, meat, and poultry.
People who believe they may have become ill from eating contaminated cucumbers, or any other food, should contact their healthcare provider immediately.
